Ingredients

  • 2 lbs chicken wings, whole or party wings

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1/2 cup Noodlebomb sauce

  • 2 tbsp unsalted butter, melted

Instructions

  1. Prep the Wings: Pat the chicken wings completely dry with paper towels. This is a crucial step for getting a super crispy skin! Place the dry wings in a large bowl.

  2. Coat the Wings: In a small bowl, mix the baking powder and salt. Sprinkle this mixture over the wings and toss until every wing is evenly coated. The baking powder helps the skin get extra crispy in the oven.

  3. Arrange and Bake: Place a wire rack on a baking sheet. Arrange the wings on the wire rack in a single layer, making sure they are not touching. This allows air to circulate around each wing for even cooking.

    • Bake at 425°F (220°C) for 25-30 minutes.

  4. Flip and Finish: Flip each wing over and return the pan to the oven.

    • Bake for another 20-25 minutes, or until the wings are golden brown and crispy.

  5. Sauce 'Em Up: While the wings are in their final bake, melt the butter and combine it with the Noodlebomb sauce in a large heat-safe bowl.

  6. Toss and Serve: Once the wings are done, remove them from the oven and immediately transfer them to the bowl with the sauce. Toss to coat them completely.

Serve these hot and fresh with a side of ranch or blue cheese for dipping. Enjoy the explosive flavor!

Tips and Tricks:

  • For an even spicier kick, add a dash of cayenne pepper to the baking powder mixture.

  • Don't overcrowd the baking sheet. Use two sheets if needed to ensure the wings have enough space.

  • The wire rack is key! It lifts the wings, allowing the fat to drip away and the air to circulate, resulting in a perfectly crispy wing all around.
